Jeff Bland, The Balmorals Michelin-starred executive chef, is constantly applauded for his exquisite craftsmanship and subtle, innovative menus. Jeff Bland and the number one team including head chef Craig Sandle retained their Michelin star, for the sixth consecutive year, in January 2009. It is currently the only hotel restaurant in Edinburgh to hold such an accolade, based on the Michelin Guides recognition of high-quality cuisine, as well as consistent service, comfort and a warm welcome for their customers. The luxurious and stylish interior of The Balmoral has an opulent and exclusive feel, a theme continued into number one, which was designed by Olga Polizzi, director of design for The Rocco Forte Collection. Setting the scene for the beautifully crafted menu you will experience here dishes like Jeff Blands mosiac of wild rabbit and foie gras, pomegranate and parsnip pure, or wild sea bass with baby leeks, squid and beurre noisette the design features goldenvelvet banquettes and rich-red lacquered walls shipped from Hong Kong. The walls are adorned with eye-catching, unique art from the Institute of Art in London (1991-1995 graduates). The bar at number one is the perfect place to relax and enjoy a drink whilst glancing over the menu. Choose from an extensive list of Champagnes, traditional and contemporary cocktails, and a range of carefully selected wines. Relax after dinner with a coffee and one of many premium whiskies or cognacs. At number one the emphasis is placed on creative dishes whilst promoting the best of Scotland by using only the finest and freshest Scottish ingredients. It is no wonder that, as well as that Michelin star, number one has received many notable accolades; it was named Best Fine Dining Experience at The Scottish Restaurant Awards and Craig Sandle won Restaurant Chef of the Year 2008 at the Craft Guild of Chefs Awards.
